Social Distancing: Days 24 - 26

So I've been verybusy at work lately, which is why I haven't posted an update in a while. When I start working on a project at work my mind is just in this "I NEED TO FINISH THIS" mode and I can't work on other things. Anyway, I've found a stopping point, so it's time to catch up on blog posts.


Day 24 (Saturday): I have decided to take inventory of all my food. That's right. Everything in my kitchen.

I had already been doing this, but I finally took inventory of my herbs, spices, sauces, etc. Yes, this is what I stare at every day when I decide what to cook and what leftover to eat for breakfast or lunch.

Before I get to the dinner portion of this, check out this super aesthetic coffee my sister made.

So tonight's dinner was Nam Sod (Thai pork salad). I had about a pound of ground pork sitting in the freezer, but what I really needed to use up were some super sad looking limes.

We ate it both with rice and in lettuce wraps. I thought it was great, though my sister prefers something sweeter. Adding some Thai basil would have made this even better though!


Day 25 (Sunday): We decide to go grocery shopping. On a Sunday. But we didn't think about what Sunday it is. EASTER. That's right, all the stores are closed except Whole Foods. And Whole Foods has a line that wraps around the building. We decide to head back home. We'll survive.

Since we have about half a head of cabbage in the fridge, we decide to make Okonomiyaki. It was delicious. We also had some green beans that seemed like they were going to go bad soon, so we fried those up as well. Of course at this point we're starting to struggle a little with what ingredients we had left. We used up the rest of our eggs for this meal!


Day 26 (Monday): We also wanted to go grocery shopping this day, but for some reason my stomach wasn't feeling so great, so we stayed home again. It's okay. We had some salmon in the freezer and some broccoli in the fridge so we made a quick meal out of that.

Unfortunately I didn't let the salmon thaw all the way before putting it under the broiler so that was a bit of a struggle to get it cooked completely. I'm still learning how to use that broiler properly. But the rub we added to the salmon was great, and the meal overall was delicious.

At this point, we were out of garlic, soy sauce, milk, fruit...we absolutely needed a grocery trip.


Salads, burgers, and shrimp toast

This past weekend was Labor Day which meant three day weekend, which meant four day workweek, and you'd think that it would be easy to get through, but I feel like I need to catch up on sleep again. I was so busy during the week that I didn't wash dishes for a whole three days, and you can imagine how gross that got.

I also somehow ended up with so much food in my fridge, so I've really been trying to eat all my leftovers. But, on to what I cooked this week.


Sun Dried Tomato, Kale, and White Bean Skillet - Budget Bytes

I just find the whole mise en place thing to be so aesthetic.

Remember how I made kale salad last week? Well I still had half that bag of kale left. So, I needed to do something with it, and I wanted to actually cook the kale this time. I don't know what it is, but I still haven't quite mastered the art of making salad. I think salads that I've gotten from restaurants are delicious, but my homemade salads are never quite fulfilling enough.

So, I made this kale skillet. It was alright, certainly better than the salad. The recipe said to saute the kale for 3-5 minutes which I think is way too long. Just a minute should be good enough. I really am sick of eating kale at this point though. I added some shrimp to this for one of my meals, which made it a lot more satisfying.

I took this with the fork laying straight up and down, but it seems so much nicer on an angle.


Drunken Aussie Beef Burgers - Cafe Delites

I might be bad at making salad, but I think I've got burgers down pretty well. I love burgers, but I'm almost always disappointed when I order one from a restaurant. They never have enough flavor. It's just cooked ground beef, and I'd like that beef to be transformed more.

This burger was surprisingly easy to eat for how tall it was.

I've had burgers on my to-make list for a while, and I figured it was appropriate to make them on Labor Day. This Drunken Aussie burger recipe had a lot of great reviews, so I figured I'd try it. And like every burger I've ever made, it was delicious. But I actually think that was mainly because of all the other toppings, and not the burger patty itself, which was a little on the bland side. Adding the beer helped, but it still felt like it was missing something. I think adding an egg in the ground beef mixture would have made it easier for the patty to stick together.

The recipe also said to use two different pans, which seemed excessive to me. I cooked all of it in the same pan in this order: bacon, onion, (wipe pan), egg, burgers. I'm happy with how it all turned out, but I don't think I'll be using this recipe again.

The salad is a lot prettier than the burger.

But hey, check out this salad that I added on the side! Since the burger called for arugula, I bought a (way too large) box of it, and I used it in a side salad as well. And I know I said I'm bad at making salads, but my "Arugula Strawberry Sun-Dried Tomato Salad with Balsamic Dressing" was decent.

I picked up the burger, and all the yolk spilled out!


Cajun Shrimp Toast - Damn Delicious

Yes, I still replace parsley with cilantro in every recipe.

Finally, I'm gonna end with this Cajun Shrimp Toast, which is another recipe that was on my to-make list for a while. This was also delicious, and I'm definitely making this again. I think it would be great as an appetizer during Christmas or some sports watching party. I don't remember exactly how many pieces of toast this yielded, but I ate more than half of them in one sitting.


Happy end-of-summer!

Summer is exhausting. Kids are out of school and everyone's on vacation, and sometimes you just need a vacation after your vacation. I'm slowly getting back to having a normal routine though.

You might be wondering, "Hey! What happened to your $30 a week thing? You only lasted two weeks!" Yeah, it might be a while until I try that challenge again. I'm trying to focus on just eating and exercising well, and I don't want to have to think about saving every penny I can.

But I told myself I'd get back to the blog, so here are three things I made this week:


Yellow Jasmine Rice (and an egg!) - Budget Bytes

See that sprig of cilantro in the corner? I was trying to be fancy.

I've made this yellow rice so many times, but it was always with chicken. The chicken was always my least favorite part of the dish, so it just made sense to only make the rice part. And then I can pair it with other things, like a fried egg! This rice tastes even better if you stir-fry it the day after.


Roasted Lemon Basil Butter Salmon with Burst Tomatoes - How Sweet Eats

Man, they really make dishes sound fancier when they put so many ingredients in the name of the dish. This was really easy to make, and the flavor was really good, but I don't know how to get my salmon to have that nice color on it. Maybe mine was so pale because I only cooked it for 15 minutes. But it's salmon! I can't have overcooked salmon! I might try roasting it for say, 8 minutes, and then broiling for 5 more minutes next time.

That salmon recipe called for the zest of two whole lemons. You know what that left me? Two naked lemons. And I totally forgot about them when making this salad, so I still have two naked lemons. Anyway, I don't really love kale or salmon in my salads, so I'm not sure why I decided to make this. I did like the dressing though. I used whatever kale came in the bag I got from Aldi, but I think this would have been better with lacinato kale.


$30 a week

I feel like I keep telling people about this $30 a week challenge that I really want to try, but keep failing at. Well, this past week was the first week in a while that I could actually cook, and so I tried the challenge again. And I did it! I spent $27.79 on food, and that's even including eating out once. And this "week" actually started Thursday night of last week, and went til today. So it's technically longer than a week.

Lemon/lime + salt + pepper makes a great dipping sauce.

Okay, so maybe this was cheating, but I had a bunch of frozen seafood already on me. Including crab legs, which I bought a month ago since they were on sale. It was a good thing I had them, plus romaine lettuce because that meant when I drove back from my family's place, I didn't have to buy groceries that same night.

And wow, romaine lettuce really does keep for a long time in the fridge. I'm pretty sure they were sitting there for a month, but they still seemed perfectly fine for eating this past week. I was able to make a few Caesar salads with shrimp (yup, I also had that in my freezer already). I considered buying croutons, but then I had this wonderful idea to just toast a bagel (that I did buy this week) and cut it up into little cubes. It turned out great, but I definitely need a break from romaine lettuce for a while.

Look, I had scallops already in my freezer too! But only scallop pieces, because I'm cheap like that. (Yep, this definitely feels like cheating) I looked up scallop recipes and decided to make Garlic Butter Scallop Bowls from Damn Delicious. (Technically, I used Budget Bytes's Cilantro Lime Rice recipe) I still don't quite understand the key to making good scallops, though the fact that I used the scallop bits and pieces probably didn't help. I really liked the flavor of them though. I wasn't as huge a fan of the pico de gallo. I feel like it had a little too much lime, so I'll have to look for a different recipe for that next time.

In trying to really stay under budget, I decided to make some shrimp burrito bowls, since I could utilize some of the unused pico de gallo, cilantro lime rice, and romaine lettuce. All I needed to buy specifically for this dish was a can of black beans. I used the shrimp and black bean parts of Budget Byte's Chili Lime Shrimp Bowls recipe. It was delicious.

It's always better to double wrap your tacos.

Okay, not everything I made utilized impulse-bought seafood from the past. Of course I had to make some tacos too. I used Damn Delicious's Mexican Street Tacos recipe. Instead of using skirt steak, I actually found pre-cut beef at Aldi, which was also cheaper than their skirt steak, so win-win. I also used sweet onions instead of red onions because I think sweet onions are far superior.

I made some with rice too!

So, I will be attempting to stay under $30 again next week. And maybe it'll feel less like cheating with less seafood already in freezer.


It's been a while

Yup, life got busy. Too busy to be worrying about a blog that not very many people read. But the blog has always been in the back of my mind, and my brain is still constantly thinking about food. I'm going to be taking this blog in a different direction. Instead of having posts that feature recipes that I've tried out, I'm going to be doing weekly food recaps of my life.

I bought these on Monday. And then I went to the grocery store four more times this week.

Last year I had a goal to only spend $30 a week on food. I wanted to bring back this goal now that I'm cooking for just myself again, and week one was already a failure. I spent close to $40 on groceries AND I ate tacos at Taco Town!

So, what else did I actually cook this week?

  • Instant Noodles (I use the stove. It still counts as cooking.)
  • Ramen Eggs - Just One Cookbook
I had 1/3 box of penne and 1/4 box of macaroni, so I figured I should combine them.

Spinach Tomato Pasta was the first meal I intended to make this week, but when I got home from the grocery store, I looked in my fridge and realized I was missing cream cheese. I don't know why I thought I already had cream cheese, and even if I did it definitely would have gone bad in the weeks I was away from my apartment.

Then later in the week, I wanted to make fajitas, but when I got home, I realized I didn't have any onions! And then later that day, I decided to make some Ramen Eggs, but as my water was boiling I realized I didn't have any Mirin! My meal planning was not off to a good start. But, I guess I could always make salads.

Proper salad mixing requires a bowl that's at least twice the size of the salad itself. So I always make mine in mixing bowls.

My mom eats salad all the time. And as silly as I think her salad habits are, I have to say she makes a really beautiful Caesar salad. So that inspired me to make my own Caesar salad! I don't know how she makes hers so aesthetic because mine did not turn out that nice.

Also, washing and drying lettuce leaves is such a pain. I really don't understand how I'm supposed to dry my leafy greens. I basically just wash them hours in advance and let them sit out, but they're still too wet, and then I use some paper towels to pat them dry, but that's not terribly effective either. I know I could invest in a salad spinner, but I think that seems like a waste of money to buy a tool just for drying lettuce.

Even though I delayed making my pasta and fajitas a day later, I still went ahead and made the ramen eggs since I figured I had to have something that would work. I replaced the mirin with some rice wine vinegar and sugar. I also used seasoning sauce instead of soy sauce, and the eggs still tasted great.

I put this in the light box...but I didn't turn the lights on.

Finally, I ate instant noodles twice this week which is WAY more instant noodle than I should even be eating in a month. But that's what happens when you scramble and keep forgetting a single ingredient in your meals. At least I got to throw my ramen egg in it!

At this point, I've got a ton of veggies to use up, so hopefully that means I won't need to buy too much from the store for next week.
