Day 33 (Monday): Every once in a while I feel the need to make a fried chicken sandwich. Because who doesn't love fried chicken sandwiches? I actually found a recipe on Budget Bytes for a baked chicken sandwich, but it looked like it was fried.
This meal was way bigger than I meant for it to be. We marinated the chicken in pickle juice overnight, which meant we had a jar of pickles with no juice, so we made fried pickles as well. My sister even made the buns from scratch.
But it was worth it. These sandwiches were really good, though I don't think they're quite as good as actual fried chicken sandwiches. I would definitely make them again.
Day 34 (Tuesday): So we actually were going to include sweet potato fries in Monday's meal, but we realized that was way too many things to cook. We moved it to Tuesday and paired it with a pork tenderloin. And...various leftover veggies because veggies are important.
I never actually posted this dish on my blog, but back when my sister was living with me last year, we baked pork and it was the best pork I've ever tasted in my life. We were hoping to replicate that here, but last year we used a pork shoulder and this time we used pork tenderloin. It was kind of dry. Lesson learned, never buy tenderloin. Always go for the butt. The pork butt, I mean.
Now those sweet potato fries were delicious. I'm definitely making them again.
Day 35(Wednesday): I was scrolling through food blogs and I saw a picture of some Bibimbap, and I don't know, but those fried eggs on top always get to me. So we decided to make some Bibimbap.
Bowl meals are great. Just get whatever ingredients you have on hand and chop them up and put them into little bowls and have a bowl party.
Delicious.
Remember how I said I was super busy at work, but I had some breathing room? Yeah, work got super busy again.
Day 36 (Thursday): I had this warm cauliflower salad on my to-make list for a while. And now I always have Tahini stocked so it felt like a good time to make it. I was a little concerned this wasn't going to be enough food for dinner, but we paired it with that pork loin we made the other day.
Yeah, that really dry pork loin. You can even see how dry it is in the picture!
But the salad was delicious. Warm salads are great.
Day 37 (Friday): One of the things I've had sitting in my pantry for waaay too long are canned bamboo shoots. I don't really like bamboo, but my sister really likes it and I don't mind it so much in curry. I had some other veggies that would go well in curry (frozen green beans, carrots) so we decided to make some.
Unfortunately, Aldi was out of chicken thighs when we went, but that's alright. This was still delicious with chicken breast. This was super easy to make and very flavorful, so I'd definitely make it again. And adding limes made it even better!
Day 38 (Saturday): Somehow with all the stay-at-home orders, I still managed to have jam-packed weekends. I had a virtual hangout with my friends during the day, and a virtual hangout with my cousins at night. So I wanted to make something easy for dinner.
I've made this beef and cabbage stir fry a few times in the past, and it's easy and tastes good enough, but I feel like it was lacking something. Maybe it needed more fish sauce and sugar. The sriracha helps though.
Day 39 (Sunday): So my sister really wanted to make Korean pizza. I don't even know what makes this pizza Korean except for the fact that we put some marinated beef on it.
But whatever. This was delicious. She even stuffed the crust with sweet potato!
Day 40 (Monday): The start of a busy workweek. So busy that I had my sister pretty much make all the dinners for the week. Starting with a Mediterranean-ish meal with some meat, roasted veggies, and a chickpea salad! I did prepare the dressing, so I contributed something! At first I was going to get some ground beef for this, but we decided to be way fancier.
Yup, look at how good that piece of lamb looks. It was a bit fatty but we like it that way.
Maybe not the most aesthetic dish when it's all put together, but it was delicious.
Day 41 (Tuesday): Before all of this coronavirus craziness, my sister, mom, and I were planning a trip to Ireland. Of course, that had to be cancelled. We were feeling a little sad about it, so we decided that we should make something Irish: Shepherd's Pie.
I didn't even know this was an Irish dish, but it's filled with meat and potatoes (and little bits of vegetables, even though I know you can't tell from the picture), so it makes sense. We may have had it under the broiler for a tad too long, but I think it tasted great.
Day 42 (Wednesday): During this whole quarantine, I've made sure to have chicken breast stocked at all times. I know chicken breast is kind of boring, but my sister has gotten really good at cooking it well.
Seriously, it was really good chicken. We also had some scalloped potatoes and asparagus to round out the meal.
What a nice fancy, American meal.
Day 43 (Thursday): After eating that chicken and that shepherd's pie, I was starting to feel really sluggish, so I wanted to have something a little bit lighter. I stared at my whiteboard for a while until deciding on making some Greek chicken wraps.
Except I had pita bread, so it wasn't actually wrapped. My sister also made me some french fries since I told her I really wanted some (: We had to be a little creative for the hummus, since I realized in the moment that we didn't have any lemons. We replaced that with some vinegar and orange, which was a really strange combination. Not my favorite hummus, but it was still edible.
The sandwiches all put together were really good though! Once again, my sister did a great job cooking the chicken.
Day 44 (Friday): We ordered takeout. Yup, we finally supported a local business and got some fried chicken. It was alright. The cornbread was dry. I don't take pictures of food I eat at a restaurant, so I don't have a picture of the fried chicken we ordered.
Day 45 (Saturday): Rounding out the American-ish meals, we decided to make meatloaf!
We put the dry cornbread in this, which I think was a good use of it. I think it turned out great.
I know meatloaf isn't very visually appealing, but it had really good flavor. My sister loved it.
Sunday we're hitting up the Asian store and the Mexican store, so that'll spice up our meals for next week.
Day 46 (Sunday): It's a grocery shopping day. We end up buying way too much food it seems (like always), but this might be the first time in a while that I wasn't as stressed out.
We ended up going to the Mexican grocery store, and I impulse bought some mini tortillas. My sister loves them! She just eats them as a snack! But we also used them for some chicken fajitas. Delicious.
Day 47 (Monday): I don't realize it yet, but it's the start of a very busy workweek. So busy I that I'm too pooped to cook. It's a good thing my sister is willing to cook.
Our fridge was getting crowded with all the groceries we got the day before, so we figured we should cook something that takes up too much space. Along with those tortillas, we also ended up impulse buying some collard greens. We actually had some collard greens on Friday when we got takeout, but it wasn't very good. My sister makes much better collard greens. We ate this with some leftover shepherd's pie.
Day 48 (Tuesday): I was probably at peak stress level on Tuesday. I ran into a problem at work that I couldn't solve, and I had no idea what to do next. Well, I didn't know what to do for work, but obviously I needed a break. Somehow we ended up with so many leftovers in the fridge, so we did another pairing of something freshly cooked with something leftover.
I had half a box of orzo sitting in my pantry, as well as a zucchini in the fridge that I needed to use up, so this was a good recipe to try. I'm usually not a huge fan of pasta salad, but this went well nicely with our leftover chicken piccata.
