I'm going to try something new, and show you more of my thought process in how I meal plan. This is inspired by the Weekly Recap posts that Beth used to make on Budget Bytes.
First of all, I cannot be spontaneous with food. If I'm cooking, I need to plan every meal, and I am constantly thinking about my next meal. So, as long as work hasn't totally exhausted me, I'll take some time every Friday night or Saturday morning to come up with the next few dishes to cook. And I start that by staring at my whiteboard.
Yes, this is an actual snippet of what was on my whiteboard a week ago. There's actually A LOT more on the whiteboard, but I just cropped this. Each date lists what I bought that day. I know, you're seeing that I've had half and half for almost two months. The internet tells me I should only keep half and half a week after opening. But it still smells and tastes fine. /shrug
But you know what, it's a whole quart of half and half so I should really find another use for it besides going in my morning coffees. I searched for recipes that use half and half on Budget Bytes, and I see that she has a mushroom pasta recipe, which works well, since I also have mushrooms that I don't know what to do with. It's perfect! All I have to buy for this is pasta!
So I also have this huge head of cabbage that I bought for my dumplings. My dumplings only took like a quarter of this head, so I need something that uses a lot of cabbage. My go-to cabbage meals are stir fry or some sort of sausage skillet, but I figured I'd try something different and make okonomiyaki. And it also works because I can use up the rest of my green onions as well!
Finally, you see that Mac n Cheese in the Already Cooked section? Yeah, I needed to do something with that. I decided to try and make fried mac n cheese balls, except it's going to end up being fried mac n cheese rectangular prisms since that's easier to cut. I wanted to make some dipping sauce for this, and of course I looked on Budget Bytes for one.
And that's already plenty of food, especially when you consider all those Thanksgiving leftovers I had. So I barely had to buy anything from the store!
...of course I ended up buying twice as many things as I had on my list. But I ended up spending a whopping $10.52, so I think it's okay. Random grocery store thoughts:
As I was checking out, I thought, "Huh. I don't have any veggies." I probably should have bought something green. I don't know why I didn't restock on cilantro. I mean, I had it on the whiteboard, but I was low on cilantro, and why would I ever be worried about having too much cilantro? Plus it's only like $0.75! That was a mistake. Definitely getting cilantro next time.
Anyway, here's every breakfast, lunch, and dinner that I ate. I also had a lot of snacks, but I'm not going to type those out, because that's just way too much to type.
Breakfast | Lunch | Dinner | |
---|---|---|---|
Saturday | Rice w/ fried eggs | Thanksgiving leftovers | Pulled pork tacos |
Sunday | Mushroom pasta | Gumbo @ my friend's | |
Monday | Roll | Thanksgiving leftovers | Thanksgiving leftovers |
Tuesday | Musroom pasta | Pulled pork tacos | |
Wednesday | Rice w/ fried egg | Pulled pork tacos | Okonomiyaki |
Thursday | Crescent rolls | Mushroom pasta | Okonomiyaki |
Friday | Crescent rolls | Mushroom pasta | Dumplings |
Stay tuned, and I'll actually show you how all the cooking went. In the meantime, here's some tacos using the last bit of cilantro I had.
Day 57 (Thursday): At this point we're just trying to clear some random foods out of our fridge. One thing that always works for this is pizza. We've already done "normal" pizza and BBQ chicken pizza, so we decided to have some Hawaiian pizza this time.
Oh, my sister also made some cheesy bread sticks to go along with it. I don't think she was terribly happy with this dish, but it still tasted good. And it made a great breakfast a couple of days later. I love leftover pizza.
Day 58 (Friday): For the first time in three weeks, I finally started to relax at work. I had been working so much that I actually ended the day at 2pm! This meant that I was able to cook dinner again!
We bought a few eggplants when we last went to the Asian store without knowing what we'd do with them. But eggplant is always good in stir-fry, and I haven't had stir-fried eggplant in a while. My sister really likes it with egg, so we used that instead of ground pork. We ate all of it that night! And since we had a lot of that honey garlic pork left, we ate that as well. Delicious.
Day 59 (Saturday): I was so excited to make some pork tacos, but when I took out the piece of pork, it smelled kind of funky and after pondering about it for a while, my sister and I decided it was best to just throw it out.
But obviously I still wanted tacos, so I walked to Aldi and bought a whole other pork butt.
Hey, I really wanted tacos. Pineapple and pork go really well together. I was also going to make some sriracha mayo, but I decided to make it interesting and put sriracha in sour cream instead. I'm never doing that again. It was weird.
The tacos were delicious though.
Day 49 (Wednesday): I actually felt a little better today, but I still ended up working way way too much. So of course my sister took care of dinner.
We had some mango that was ready to eat, and so my mind immediately went to shrimp tacos.
I love tacos. Tacos are always a good choice.
Day 50 (Thursday): Holy crap, day 50 already?! Anyway, we had some chickpeas sitting in the fridge that I felt needed to be used, so I figured we could make some falafel.
This was a little bit of a struggle, as the falafel patties totally fell apart when we tried to fry them. It's alright though. My sister managed to salvage them, and at the end they came together nicely. We also had some roasted eggplant and leftover orzo pasta, since that seemed appropriate. Overall, a good meal even if we had to go through some mishaps.
Day 51 (Friday): The end of a stressful work week. I was very exhausted by now, so I was definitely not in the mood for cooking dinner. However, my sister is always up for cooking dinner. And she decided to go all out for dinner by making some hand-pulled noodles.
My sister told me that this was harder than she expected. But I think she did a fantastic job. The noodles were delicious.
Day 7 (Wednesday): So during my multi-grocery store excursion, I impulse bought some Ahi Tuna, because of course I did. And because I was out for three hours, that gave plenty of time for that slab of tuna to already start thawing, so I figured we might as well keep it in the fridge and have Poke the next day.
One of our lessons learned from past poke parties is that we usually buy way too much fish. So we picked out the smallest piece (about 1/2 lb), and we decided to NOT add any extra items to our grocery list because the best way to do poke parties is to just use what you already have.
Another lesson learned is that we should just marinate the fish, and not any of the other ingredients because otherwise it gets too salty. My sister makes the most delicious marinade with soy sauce and other Asian sauces and ginger and garlic and onions and she even included some lime this time!
If you're wondering, yes, we ate everything on that table. There were no leftovers, and there shouldn't be, since this is raw fish we're talking about.
Day 8 (Thursday): We had a planned game night with our cousins this day, so I wanted to make something easy. I still had a lot of pulled pork leftover from a few days ago, so it's taco time again!
I was expecting to do another taco night, so I made sure to buy lots of cilantro and sweet onions. I also happened to buy Mexican cheese, which I wasn't even planning on using for this. (I like putting Mexican cheese in my green bean casserole...which will be for another blog post!) But it adds some nice color to the tacos!
Also, we're sitting here at my dinky table, when I realize how nice the lighting is at one particular spot. And I realize that I have a spotlight in my kitchen that is pointing RIGHT at that spot on the table, and I have two other spotlights and I'm like WHY HAVEN'T I NOTICED THIS BEFORE. I need to buy a ladder now so I can re-angle these lights and give my pictures better lighting for the future.
My sister also made some shaobing. She's so talented.
Day 9 (Friday): So one of my friends is really into those Bon Appetit videos, and I figured I'd watch one to see what all the fuss is about. I'm not really into watching videos about food, but watching this video of this guy making pasta with chickpeas really made me want to make pasta with chickpeas.
Except this is more like soup. Pasta soup? They call it "brothy pasta" which my sister thought was weird, but that's what it is! You eat it with a spoon! We also threw in some kale and celery that we just happened to have. I thought it was great. I'd make it again.
Oh remember how I was struggling to find flour at the grocery store? Well, that's not the only thing we struggled with. We also couldn't find butter. We did find butter substitutes though, so we bought two packs of margarine. My sister used it to make these croissant-like things that don't really resemble croissants at this point, but whatever. It was still tasty.
