Mostly Mexican Food

I've been so busy at work that it's consumed my brain, and I haven't had a lot of mental capacity left over for really giving my cooking as much thought as I'd like. Which means I end up forgetting to take pictures of things. But, I looked at my phone, and it turns out I have enough pictures to write a post on some random things that I made over the past two weeks.


Chicken Fajitas - Budget Bytes

I went a little crazy with the filters on these photos.

I had gone home to visit family for a week, in which I accompanied my mom in grocery shopping. She bought a ridiculous amount of vegetables that she wasn't going to be able to finish, so she gave me a whole bunch of stuff to take back to my place. Part of that was a lot of onions and bell peppers, so naturally, I had to make some fajitas. I've made these fajitas so many times, and they're always delicious.


Chili Rubbed Pulled Pork - Budget Bytes

Speaking of things wrapped in tortillas, I also made these pulled pork tacos. I don't have a picture of the initial batch of pulled pork, but I actually made it in non-taco form for my mom and her friend when they visited me. I also made cilantro lime rice (which you can kind of see in the tacos) and brussels sprouts and broccoli. Yes, there was a lot of flailing that day as I kept going back and forth between working and cooking.


Cilantro Lime Chicken Thighs - Damn Delicious

I see cilantro and lime together, and I'm like "YES. I WANT THAT." So what happens is I buy those things for tacos, and then I just end up making more Mexican food because Mexican food uses a lot of cilantro and lime. (At least the kind I like does) These chicken thighs were really good, though I think using the cast iron pan was more trouble than it was worth for this. Next time, I'll just stick to one of my normal pans.

Oh, and obviously, I need to have some sides too, so I cooked some sweet potatoes and veggies. I didn't really use a recipe for them. I just cut them up, drizzled olive oil, and sprinkled various spices on them.


Chorizo and Sweet Potato Enchiladas - Budget Bytes

Yeah! Even more stuff that I wrapped in a tortilla! I just really like tortillas, okay? But, the heading for this is totally a lie, because when I went to the store they were completely out of chorizo, so I had to settle for just "sausage" instead. To be honest, I'm not a huge fan of enchiladas, but I had sweet potatoes, and I had been just roasting them so I wanted to do something different. This was good, but I think I just need to take a break from the Mexican food now.


Three Cheese Pizza

Apparently I'm not capable of making circular pizzas.

Yeah I know, this is totally random and why this post is only mostly Mexican. Hey, I had some pizza dough and pizza sauce in the freezer, so why not. I had cheddar, mozzarella, and parmesan, so that's why it's three-cheese. This wasn't bad, but I'm going to have to improve on my pizza-making game. I definitely put too much sauce compared to cheese.


Pasta, Pizza, and Dumplings

I don't have anything exciting to say in my opening sentence of this post, but hey, look at my fancy breakfast I made last Sunday! My arugula salad was really good.

I actually ate 4 pieces of toast, but they didn't all fit on the plate nicely.

I went to a diner for lunch that day, and I ate pancakes, so I really had breakfast twice in one day, which is way too much breakfast for one day.


One Pot Roasted Red Pepper Pasta - Budget Bytes

I had so much arugula left that I threw some in all my pasta meals.

So I had some cream cheese that was sitting in the fridge for who knows how long, and when I went to use it, I saw a piece of mold! But there was still a lot of cream cheese in that block, and I really didn't want to throw it all away (plus I was going to eat a bagel), so I did some googling to see if I could salvage the cream cheese, and I got...mostly bad news. But this one random person said it would be fine if I just cut off the chunk around the mold, so that's what I did! And that was two weeks ago, so I think it was fine.

Anyway, I bring that up because I felt like I really needed to use up all my cream cheese quickly after that. And this pasta optionally takes cream cheese. Turns out I used almost all the cream cheese on my bagels, so I barely had any left for this pasta. But that's okay, it still turned out really well. I cut the recipe in half (except for the diced tomatoes, because half a can of diced tomatoes is kind of useless), and it made enough for five meals. I usually hate leftover pasta, but this time the leftovers actually tasted decent.


Bacon and Caramelized Pineapple Pizza - Budget Bytes

I had the most random things in my fridge: canned pineapple, bacon, arugula, jarred red peppers, shredded cheese, green onions. After thinking about what else I can do with my much too large supply of arugula, I figured pizza would be good. All I needed to buy was pizza dough!

But wait, that pizza doesn't have arugula. Yeah, so I was looking up pizza recipes mostly because I wanted some inspiration, and I saw this recipe for bacon and pineapple pizza. And I had bacon and pineapple, so I thought this was perfect. It tasted really good, but I need to get better at dealing with pizza dough. I don't think I quite understand how to form it in that nice circle shape.

Oh, don't worry, I used the arugula in my own Tomato, Red Pepper, and Arugula White Pizza.

I don't know how I managed to make this so oddly shaped.


Sweet Chili Charred Brussels Sprouts - Love & Lemons Cookbook

I don't have a link to this recipe since I got it from a cookbook. The recipe was actually for broccolini, but brussels sprouts were on sale at Aldi. I really like the taste of the sauce that was used, which consisted of some tamari, rice vinegar, srirachi, garlic, and sugar. I accidentally overcooked it a bit though, by leaving it in the oven for 20 minutes. I might use the sauce in a stir-fry later.


Pan Fried Dumplings - Damn Delicious

I was down to my last two bags of emergency dumplings, so I wanted to make some more. I normally just throw whatever I feel like in my dumplings, but I figured I'd try a recipe this time. This was a pretty typical dumpling recipe, but I really didn't want to buy zucchini or carrot, so I only used cabbage and green onion. Tasted decent enough, but I don't think I'll use it again. I thought the texture was a little weird.

But hey, I have ten freezer dumpling meals now!


Stuff I cooked a while ago

I meant to write this blog post over two weeks ago. Then I got really busy, and I went on vacation, and now I don't really remember what I wanted to write about. But I have all these pictures so I should at least show them to you, and maybe looking through them will help jog my memory.

Remember how I subscribed to Misfits Market to get veggies delivered regularly? Well, I canceled it a while ago, but they did send me an email asking me to use their service again AND they gave me a complimentary box. I kind of feel bad because half of this box went to waste. It wasn't my fault though. The produce was sitting in transit for way too long and by the time it was delivered, the ice packs were completely melted, and the spring mix looked really sad. So, yeah, this free box didn't convince me to sign up again.

But, I did get an eggplant that I could use. I really like stir fried eggplant so I made Chinese Eggplant with Garlic Sauce. I know I didn't have any spicy bean paste or ground pork at the time, but it still tasted good without those ingredients.

And to go along with the Asian theme, I made some Sesame Chicken. This is a pretty old Budget Bytes recipe, and it was recently updated to double the sauce. I don't think it needs nearly that much sauce, so I would actually cut it in half now. So easy to make though, and very delicious.

It's really hard to tell from the picture of produce, but I did get some zucchini in a bag (why some things get put in bags, and others don't, I have no idea). Zucchini is not my favorite vegetable, as it reminds me too much of college cafeteria food, but turning it into Zucchini Fritters makes them a little better.

While I'm not a huge fan of zucchini, I really don't like butternut squash. It just tastes like a cross between a sweet potato and a pumpkin, but somehow much worse than either of those. I also don't know what I'm supposed to do with it except roast it or turn it into soup. They also take forever to cut up, which makes them not worth it to cook at all. But hey, this was free and I didn't want to waste it.

I do love salmon, though! This recipe came from a book, so I can't exactly provide a link. I still haven't quite mastered the art of baking salmon. I think I may have put it in the oven at 350 or 400 degrees for 10 minutes, and then broiled it for 5. This was waaay overcooked, but at least the rub was really tasty.

Also mango salsa to go on top of the fish! Because I had mangoes in the box!

For some reason I thought the mango salsa would go with the sesame chicken. I don't think I'd pair the two again.

Oh yeah, I also made collard greens (because it was in the box!), but I neglected to take a picture of the collard greens by itself.

Not box related at all, but I also cooked Shrimp Scampi Florentine, with some pasta added. This dish is always delicious.

I had a dinner with friends where we all made pizza. Anytime I get to choose my own pizza toppings, I will always choose BBQ chicken. For some reason every time my family orders pizza, they ask me what pizza topping I want, I tell them barbecue chicken, and they give me a look and proceed to not get any barbecue chicken. It's okay. I can just make my own.

And finally, here's one last picture of that chicken rice skillet. Because I must have had leftovers from the week before and this picture looks nice.

And that concludes this long, not-very-cohesive post. Honestly, it'll probably be a while until my next post because my schedule is crazy and I'm not going to have too much time to cook. Maybe once the summer is over!


BBQ Chicken Pizza

So I was staring at my list of foods that I have in my kitchen wondering what I should cook. I had a chicken thigh and a half, some shredded cheese, and a lot of onions. I mean I can put onions in anything, but I really had a surplus of them so I wanted to feature them in a dish. They always taste good caramelized, but I only ever think of using caramelized onions in burgers and pierogies.

And then it hit me when I was walking home from work one day: BBQ chicken pizza. Barbecue chicken is my absolute favorite type of pizza. And I had everything I needed to make it.

Okay, one and a half chicken thighs weren't quite enough so we added some chicken breast.

At least I figured I did. I could have sworn one of my go to food blogs that I frequent had a BBQ chicken pizza recipe, but I couldn't find it in any of them. But hey! I don't need a recipe for pizza. You just put a bunch of stuff on pizza dough.

And since my sister is here, we made the dough from scratch. I still am not comfortable enough with dough so I probably would have bought pizza dough from Trader Joe's if I didn't have her help.

Our pizza toppings (before baking):

  • Hickory Smoked BBQ Sauce
  • Colby Jack and Monterey Jack Shredded Cheese
  • Chicken Thigh and Chicken Breast
  • Caramelized Onions

And then some green stuff (after baking):

  • Cilantro
  • Green Onions
  • Avocado

Concluding with a pizza slice slightly sticking out again.


Strawberry Pizza

I really like How Sweet Eats. Jessica Merchant just posts so many interesting recipes. During my food blog browsing I came across Strawberry Pizza with Bacon and Caramelized Onions.

Which sounded real intriguing. I looked at the ingredients and I like pretty much everything that she put on the pizza. Of course I also scrolled through the comments to make sure someone actually tried it and gave it a good review.

Making anything involving dough kind of scares me, but my sister is great with dough so I had to make this while she's here. Plus strawberries were on sale!

It was delicious. If I ever make it again, I'd need to make note of a couple of things.

  • Use two onions. Maybe three onions. Seriously, this needs way more onion.
  • Get a larger baking sheet so I can make a larger pizza. The pizza crust was a bit too thick for my liking.
