Still on my quest to clear out everything in my kitchen! I'm making progress!
I have finally used up all of the two curry packets that my aunt gave me several months ago. I think I used 1/3 of a single packet each time I cooked some curry, and one dish would last me four meals. Kenji's kare raisu recipe has been my go-to way of preparing curry, even when my curry powder is Malaysian and not Japanese.
When I made spring rolls a couple of months ago, I had some leftover vermicelli (because I always have leftover noodles), so I made some Singapore noodles with them. I sort of referenced this recipe on Budget Bytes, but I didn't measure anything, so I'm sure I used more curry powder and soy sauce than what it called for. Noodles were a little soggier than I'd like, but that was to be expected, and it was still delicious.
Something else that I had leftover from the spring rolls was toasted rice. I was looking up other ways to use toasted rice, and I saw that it's used in larb! I've never made larb before, but my aunt makes it (and hers is delicious), so I wanted to give it a try. The Woks of Life recipe said that you can serve it with some sticky rice, and I just happened to have a bag of in my pantry. This was tasty, but not nearly as good as my aunt's.
Finally, I had a little bit of cornmeal still sitting in my pantry, so I decided to use it all up and make some cornbread. I just followed the recipe that was listed on the container, and I had exactly the amount of cornmeal that it called for! I also figured this was a good reason to use my square muffin pan. The cornbread was easy to make, but it did have some weird volcano-like action going on while it was baking, and each piece had a little point at the top which was not what I expected.
Oh, I impulsively bought some "Mediterranean spiced salmon" from Aldi because it was half off, even though I'm pretty sure I've had more than one person tell me that the pre-marinated pieces of fish at grocery stores are terrible. Well, I had never tried one myself, but uh, I have to agree. It was really bad. It would have tasted better if I had just baked a piece of plain salmon.
I also had spinach leftover from that sad chicken alfredo pasta, so I decided to go full-on Boston Market and make some creamed spinach. This was pretty bad. I should have just made a salad and eaten the spinach raw.
But look at the bright side. I'm getting closer to having empty kitchen cabinets 🤩
For some reason, I keep buying milk at the grocery store, then realizing it's about to expire so I scramble to find something to make with it, and then once it's gone I end up buying another quart of milk because I need it for something else.
Anyway, this time when I looked up recipes that use milk, I came across this Chili Cornbread Skillet. So I read the recipe and it looked pretty simple. Make some chili, mix up some cornbread mix, put it on top of the chili and then bake it.
The only thing I wasn't sure about was What pot or pan do I use? The recipe said to use a 4qt skillet. I don't know if most pans are labeled with their volume, but mine aren't. I had a deep skillet that I wanted to use, but I wasn't sure if it was big enough. So I actually went and measured 4 quarts of water and started dumping it in this skillet. Turns out it only holds 3.5qt. Alright, I'll use my pot instead.
Look at all that extra room in the pot! I totally could have used my skillet! That would have been so much better and so much more aesthetic. Plus I had preheated my oven not realizing how close the two racks were and then I needed to awkwardly remove one to make the pot actually fit.
Overall, this recipe was alright. A good number of commenters said that this was bland and I have to agree with them. I doubled the amount of salt, but I think I should have doubled all the spices. The cornbread was also kind of bland. It needed more sugar at least. And maybe the whole thing needs more cheese because I barely noticed it in between the chili and the cornbread.
I really enjoyed the leftovers though. I reheated the cornbread part in the toaster oven and the chili part in the microwave, which worked out well.
Today I made another southwest-y dish: Creamy Chicken Fajita Pasta. The reason I decided to make this was because I happened to have half a block of cream cheese and 2 bell peppers that I needed to use up.
Now this was delicious. I really like the pasta recipes on Budget Bytes. And cream cheese in pasta is great. Problem is, I still don't like leftover pasta, and I have a feeling this will go from a 5/5 meal to a 3/5 meal in leftover form.
Day 12(Monday): We still have a decent amount of Thai basil leftover, and I figured it's due time for some stir fry. Plus I don't think it's going to last another day. I'm scrolling through recipes from The Woks of Life and I come across one that looks good. It also looks familiar. I made it last year! So I check my old posts, and it says to double the amount of basil. Well, that's not happening. Doesn't matter. This was still delicious.
We also realize that even though we bought a ridiculous amount of groceries the week before, that we were running out of fruit! So we go back to the grocery store an pick up more stuff. Hey, we lasted one extra day this time!
Day 13 (Tuesday): I have a friend of a friend that apparently works at a local restaurant, and they've got a ton of food (ingredients) that they're telling their employees to take home. So what does that mean for me? I get a surprise box of produce! It's like Misfits Markets again!
I mean, really all I specifically asked for was avocados, but she asked me if I was also willing to take limes, and so I said, I'll take anything! But these avocados are super ripe, so they need to be used today.
And what else can we do with avocado? Put them on some BBQ chicken pizza!
We half the dough recipe this time since we had super thick pizza two days ago. But this turns out super thin. Next time we'll go with 3/4 the amount of dough. And maybe one day I'll actually buy a circular pizza pan so we can have proper circular pizzas.
Day 14 (Wednesday): Yesterday we had chips and guac. Today we decide to have chips and queso!
But what about dinner? We have so much food. Why did we buy so much food? What do we have that looks like it's going bad? The green beans are looking a little sad. Let's make green bean casserole! I have this can of Cream of Chicken that has been sitting in my cabinet for who knows how long. It looks like it expired last year. But it's canned, so I assume it's fine.
In making the pizza and the cheesy bread a few nights ago, my sister learned that I have a large amount of cornmeal just sitting in my pantry, so this inspires her to make some cornbread.
Now all we need is some protein in this meal. I did buy a family pack of chicken breast from the store on Monday. So I look for some chicken breast recipes, and found this super basic one from Budget Bytes. Chicken breast is kind of boring, but as long as we absolutely do not overcook it, it will be delicious. The recipe says to cook for 20 minutes. I think we cooked it for less than 15. Perfectly cooked chicken breast.
