I spent waaay too long trying to pick out another theme for this site since I didn't like the fact that the old layout was infinitely scrolling. And you know what happened? This theme also does the same thing! Whatever, I like the way it looks. One day I'll make my own theme.
Anyway, check out this salmon I cooked! I was browsing How Sweet Eats and I came across Winter Citrus Butter Salmon. It seemed like the perfect thing to make since I love salmon and I had oranges I needed to use up.
We followed the recipe exactly, and I seriously have no idea how Jessica managed to cook the salmon by broiling it for 8 minutes. I mean, I like my salmon undercooked, but even this was a bit much for me. A couple of adjustments I'll be making for next time:
We paired the salmon with leftover veggies from a work event. And rice because we eat lots of rice.
I give the recipe 5/5 stars, would make again. In fact I want to try all of Jessica Merchant's salmon recipes.
We have way too much food right now. I cook dinner around every other night, and my sister bakes stuff, and all of a sudden our fridge is filled with food. I decided we needed a leftover night, but I also decided we didn't have enough leftover vegetables. So I cooked broccoli.
I sorta kinda used the Quick Garlic Parmesan Broccoli recipe from Budget Bytes. Somehow I made my broccoli really yellow though ): I don't think I'll be making this again, because that was way too much work for broccoli.
I also used two whole pans for the recipe. And I wanted to heat up the rest of my pierogies, so I used another pan for that! This is way too many pans for leftover night.
I had a lot of rice in the fridge with no protein to go with it, and I also had chicken in the freezer.
I made Sweet and Spicy Glazed Chicken Thighs from Budget Bytes. It was super easy to make, and it tasted pretty good, but I thought it was missing something: fish sauce. That would have made it so much better.
That's right. I saw this Fire and Ice Chili recipe from How Sweet Eats, and I was so intrigued by the fact that she put chocolate ice cream in her chili.
I actually looked for dark chocolate ice cream in three different grocery stores, but I couldn't find it until I went to Whole Foods. And then I spent a whole $9 (!!!) for a Haagen Dazs-sized thing of Jeni's ice cream, which is ridiculous.
Okay, but I gotta admit, Jeni makes pretty good ice cream.
This was a really interesting tasting chili. It was sweeter and less tomato-y than I'm used to, but I liked it. Not sure I'll ever make it again though, mostly because it took two hours, and that ice cream was stupid expensive.
But if I ever see it on sale, I'm totally trying the coffee flavor.
I really like How Sweet Eats. Jessica Merchant just posts so many interesting recipes. During my food blog browsing I came across Strawberry Pizza with Bacon and Caramelized Onions.
Which sounded real intriguing. I looked at the ingredients and I like pretty much everything that she put on the pizza. Of course I also scrolled through the comments to make sure someone actually tried it and gave it a good review.
Making anything involving dough kind of scares me, but my sister is great with dough so I had to make this while she's here. Plus strawberries were on sale!
It was delicious. If I ever make it again, I'd need to make note of a couple of things.
