More rice dishes!
I still had those olives sitting in my fridge from the Greek Chicken we cooked a few weeks ago, and I wanted to use them up. And I guess olives means another Greek dish.
I really like the skillet rice dishes from Budget Bytes, and I hadn't made the Greek Turkey and Rice Skillet yet so I figured I'd give that a try. This was really easy to make, and all of the flavors worked really well together.
The only modifications we made were using fresh spinach instead of frozen (because frozen spinach doesn't taste as good), and using cilantro instead of parsley (duh).
We may end up making all of the rice dishes in Budget Bytes before my sister leaves.
This meal was somewhat inspired by the Sesame Slaw recipe I saw on Budget Bytes. Yup, it's something like -2° Fahrenheit outside, and we're making salad.
This was just one of those meals where I tried to utilize whatever was in my fridge/freezer as much as possible. We still had a small amount of frozen dumplings left over from the dumpling party. We also had one piece of sweet and spicy chicken left.
Oh, and lots of salad dressing packets. I keep buying various salad mixes that come with dressing packets, and then only end up using the veggies since I put them on my tacos.
It was a pretty delicious makeshift Chinese meal.
Of course, now we have a bunch of leftover salad. But you know what's great about cabbage? You can always stir fry it...
I really like How Sweet Eats. Jessica Merchant just posts so many interesting recipes. During my food blog browsing I came across Strawberry Pizza with Bacon and Caramelized Onions.
Which sounded real intriguing. I looked at the ingredients and I like pretty much everything that she put on the pizza. Of course I also scrolled through the comments to make sure someone actually tried it and gave it a good review.
Making anything involving dough kind of scares me, but my sister is great with dough so I had to make this while she's here. Plus strawberries were on sale!
It was delicious. If I ever make it again, I'd need to make note of a couple of things.
That's right. I saw this Fire and Ice Chili recipe from How Sweet Eats, and I was so intrigued by the fact that she put chocolate ice cream in her chili.
I actually looked for dark chocolate ice cream in three different grocery stores, but I couldn't find it until I went to Whole Foods. And then I spent a whole $9 (!!!) for a Haagen Dazs-sized thing of Jeni's ice cream, which is ridiculous.
Okay, but I gotta admit, Jeni makes pretty good ice cream.
This was a really interesting tasting chili. It was sweeter and less tomato-y than I'm used to, but I liked it. Not sure I'll ever make it again though, mostly because it took two hours, and that ice cream was stupid expensive.
But if I ever see it on sale, I'm totally trying the coffee flavor.
I had a lot of rice in the fridge with no protein to go with it, and I also had chicken in the freezer.
I made Sweet and Spicy Glazed Chicken Thighs from Budget Bytes. It was super easy to make, and it tasted pretty good, but I thought it was missing something: fish sauce. That would have made it so much better.
