If you read the table in my last post closely, you'll notice that I had mac n cheese a few times. As you know, I made a gigantic batch of mac n cheese last Thanksgiving and I still have way too many frozen mac n cheese blocks sitting in a bag. So I decided to fry up some more of these.
I reread my old fried mac n cheese post, and I had suggested to myself to dip the blocks in flour before dipping them in egg. So I tried that this time. Did it make a difference? I have no idea.
But you know what? This deep frying experience was...much less flail-y than I expected it to be. Maybe deep frying food isn't that scary. I just had to not turn the heat up so much. That must be the cause of so much of my cooking anxiety growing up. My mom always insisted on everything being cooked on high heat, but you know what that resulted in? Flying pieces of cabbage and a huge oil burn on my leg.
But not this time. This went surprisingly well.
There was one point last year where I took this book called Cook90 out from the library. It's about a challenge where you cook all the food you eat 90 days in a row. That's a lot of time. I didn't do that. I just got it because the recipes looked good.
One of the concepts in this book is something called "nextovers". Basically, you cook things, and then you use what you cook, to cook something else. I do this all the time, but I never came up with a fancy term for it.
Anyway, because I had a ridiculous amount of mac n cheese left, I figured I'd give it the "nextover" treatment. I really love ordering fried mac n cheese balls from restaurants, so why not try to make it myself? So, shortly after I made this mac n cheese, I went and cut it up into little cube things. Honestly, I should have cut them smaller, but this was already way more work than I wanted it to be.
I looked up fried mac n cheese ball recipes, and I found one on Damn Delicious. You literally take mac n cheese, roll it up in a ball, dip it in egg, coat it in breadcrumbs, and deep-fry it. Okay, that's barely a recipe, but whatever, let's try it. And I already have breadcrumbs because my aunt mailed me some!
I also figured I'd be kind of fancy and make my own marinara sauce. I have a lot of marinara sauce now.
I think this turned out...okay. I guess fried mac n cheese only tastes as good as the pre-fried version. If I try this again, I think I need to use flour as well. Dip it in flour, then egg, then breadcrumbs.
Also, I don't think I quite know how to deep-fry things. I was just telling one of my friends how I don't bother putting a thermometer in the oil. I just kind of wait for the thing to be able to sizzle, and hope for the best.
I ended up overcooking the second batch. Oops. I made about 12 of these and that used up all the breadcrumbs I poured into my bowl. I still have a lot of mac n cheese, but I was staring at the weird looking cubes thinking "Okay, I need to stop."
Moral of the story: when you want mac n cheese, make a very small batch.
This past week was weird. It's the first time in my life that I'm not home with family on Thanksgiving. To make it feel more "Thanksgiving-y", I decided to cook a bunch of Thanksgiving food this past week! And by that I mean I cooked a bunch of American food, and after about two days of it I remembered something: I don't really like Thanksgiving food that much.
Anyway, I started off with some pulled pork because turkey is too much work, and it doesn't taste as good. And the pulled pork was delicious.
And then later that day I made some mac n cheese. I've had mac n cheese on my "to make" list for a while, and I've also had a pound of elbow pasta sitting in my pantry for who knows how long. I've always been a fan of baked mac n cheese, but after I cooked it, I totally regretted cooking a whole pound. Also, I'm definitely making a stovetop version next time.
Yeah, that was a lot. It's still a lot. The recipe said this was more like a casserole, and she wasn't kidding. Once you put it in the fridge, it just hardens and I feel like I have to microwave it for two minutes just to make it not shaped like a block. I've eaten about a quarter of it by now, and I don't think I can eat any more, so I cut it all up and threw it in the freezer. I'll figure out how to repurpose it.
I also made some collard greens. When I was talking to my aunt on the phone, she suggested it and I thought it was a great idea. The recipe I used wasn't bad, but I made a few tweaks. I cut the bacon before cooking it. I also added about a tablespoon of brown sugar to the recipe, which made it much better.
And finally, I made some sweet potatoes. I went with this cumin lime recipe because I have a bunch of lines in the fridge, but I also thought it was kind of weird to have a lime-y dish in my Thanksgiving meals. Oh well.
Yeah, I'm totally sick of Thanksgiving food now.
Day 27 (Tuesday): Finally! Grocery shopping time! We go to Target since we need some non-food items, and then Trader Joes because Target is seriously lacking on actual food items. We made it to Trader Joes literally two minutes before the store closed. And I am pooped. My sister takes control of dinner because I am too exhausted to do anything else. Shopping is stressful during these times.
She made some Kimchi fried rice which was already on our list of things to make, but the lack of eggs made that harder. And you just need that egg on top. Look at how good that looks. It tasted great too.
Day 28 (Wednesday): We have eggs! And fruit! And other foods! It's amazing! Anyway, I had Mac n Cheese on my list of things to make, and we finally had the ingredients to make it.
What a classic American meal. This was pretty good, but I don't think I'll use shells if I make mac n cheese again. I guess I should have called this shells n cheese. They have a tendency to get inside each other.
Day 29 (Thursday): We still had leftover Indian food, but we were all out of naan, so my sister made some paratha, which is an Indian flatbread. She was so so so excited about it, and even more excited when she tasted it. It was deeelicious.
For dinner that night, we made burgers. I saw a picture of a burger a few weeks ago and since then it's been on my list of things to make.
You can never go wrong with a homemade burger. Burgers are always better when they're homemade.
I wanted a picture of one of us holding up the burger but it was way too messy. I guess that's a good thing though.
