Pasta aglio e olio

March 2, 2022 9:33 PM

Whenever I go over to my friends' places and they cook for me, I find it so inspiring. Homemade food is always so good, and usually so simple. I go to restaurants and I eat take out, and I'm pretty much never impressed, but there is something about a homemade dish that is incredibly satisfying. Everything that my friends make, I want to make too.

A few weeks ago, one of my friends showed me this spaghetti aglio e olio recipe that she had been making a lot of. (It took me a few times of saying that dish out loud before I could remember it) It was pretty good, but my friend loves spicy foods and doesn't like things too salty, so she doubled the red pepper and added way less salt than the recipe called for, and well, it tasted very pepper-y to me. So I wanted to try making this myself.

Also, the recipe says Don't serve cheese with this and I know I'm basically asking to be told what to do when making a dish, but I don't appreciate recipes telling me not to add cheese to my pasta. So I searched for another recipe, and I was feeling Love & Lemons take on it more.

And after taking this photo and taking a few bites I added more parmesan

I was feeling fancy so I used bucatini instead of spaghetti, and I wanted some vegetable in this so I added some grape tomatoes. Cooked tomatoes are delicious and this dish was delicious and the noodles were so fun to eat 😊

More salmon

You guys know I love salmon. One of my friends has been raving about this Garlic Butter Baked Salmon so I figured it was time for me to try and make it myself.

Salmon, Broccoli, and Potatoes

The recipe calls for asparagus, but I just happened to have broccoli on me so I used that instead. And lemon-y broccoli? Not quite the same as lemon-y asparagus. I do think this would have been better if I used asparagus instead. I also don't know how I feel about one-pan baking meals. Something about the meat juices seeping into the veggies weirds me out. I also didn't even have enough room in my pan to make this all fit in a single pan, so I put the broccoli in its own pan.

I know, that would have made a lot more sense if I put the salmon in its own pan instead. Hey, at least I cooked it right side up this time!

Salmon, Broccoli and Potatoes on a plate

The salmon tasted good, but I definitely overcooked it. I think salmon cooks better at 350 instead of 400. But the potatoes? They were delicious. I know, it's just salt, pepper, and olive oil, but it was so good I bought and roasted more potatoes the next day.

I also cooked a lot of salmon (maybe that's why it didn't all fit in one pan), and I happened to have some leftover sushi rice, so I turned some of it into sushi.

Cooked Salmon Sushi

Clearly not as good (or as pretty) as raw salmon sushi, but still a pretty decent breakfast.
